Ingredients:
- 4 ounces diced pancetta
- 2 tablespoons butter
- 8 eggs
- 1 cup half and half
- 1/3 cup flour
- 2 tablespoons chopped chives
- 4 ounces chevre (goat cheese) cut into small pieces
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- ¼ cup shredded cheddar cheese
In a medium skillet, cook the pancetta in melted butter for 5 minutes until crispy brown. Set aside. In a bowl, beat the eggs, half and half, flour, chives, goat cheese, salt, and black pepper until well combined. Add the pancetta. Mix well. Spray a deep 8” x 8” baking pan with cooking spray. Pour in the egg mixture, sprinkle on the cheddar cheese and bake in preheated 375° oven for 20-25 minutes until puffed. Remove from oven, cool slightly. Serves 4-6.
