HONEY GINGER PORKCHOPS WITH LIME



Ingredients:
  • ¼ cup honey
  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon grated fresh ginger
  • 2 large cloves garlic, minced
  • ¼ cup rice wine vinegar
  • 2 tablespoons Sriracha (hot chili sauce)
  • 2 tablespoons brown sugar
  • Zest and juice of 2 limes or Meyer lemons
 
In a small saucepan, heat the ingredients for the marinade until it comes just to a simmer.  Remove from heat.  Cool to room temperature and place in a shallow baking dish. 
 
Add:
6-8 pork loin chops (it has the little tenderloin attached), with bone, cut 1” thick
Turn the chops over to coat both sides.  Marinate for at least 30 minutes and up to 2 hours.
 
Heat a heavy duty grill pan or skillet.  Grill the pork chops for 4 minutes, turn and grill other side for another 4 minutes.  Place in a 250° oven for 5 minutes. 

Place marinade ingredients in a small saucepan.  Bring to a simmer, cook for 5-10 minutes until thickened slightly and pour over the pork chops just before serving with lemon or lime slices on top.  I like to serve this dish with steamed baby bok choy, found at your local Asian markets for about $3 per bag of about 12 petite bok choy.  Cook the same method as the Swiss chard (recipe above). Serves 6-8.
