- 1 English cucumber, thinly sliced (I use a mandolin)
- 2 slicing tomatoes, cut into eighths
- ¼ red onion, diced
- 3 green onions, thinly sliced on diagonal
- 6 radishes, thinly sliced or quartered
- 1 tablespoon white wine vinegar
- 2 tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ cup finely chopped Italian parsley
