MOMMA’S MEATBALLS

 
Ingredients:
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 2 large eggs
  • 1 T. minced garlic
  • ¼ cup grated Romano cheese
  • ¼ cup chopped fresh parsley
  • 1 tsp. dried Italian seasoning
  • 2 cups soft breadcrumbs softened with ½ cup milk
  • ½ tsp. kosher salt
  • ½ tsp. black pepper
Mix all ingredients in bowl.  Form into 1 ½” balls and place on greased baking sheet, or fry in oil, browning on all sides.   Do not cook through.  Bake meatballs in 350˚ oven for 5-8 minutes. They should be browned on outside, still slightly raw in center. Transfer to sauce to continue cooking for another 30 minutes.  Makes about 25 meatballs.
